Here is another directly imported matcha from our friend Keita based in Kyushu, Yame. It is similar to Tokusen, as it also has cacao flavors, incredibly rich and balanced. It is slightly less deep than Tokusen, but a tea that must be reckoned with, as it is almost as complex as Tokusen, which is one of our best matchas. Again, stock is limited here.
For a thick tea: warm up your bowl with hot water, sieve 2,5 to 3 grams of matcha, pour 30 grams of 70 degrees water, mix everything together with your whisk until perfectly creamy and foamy. I, Hillel Lowinsky, prefer a thicker tea because when it's as delicious as our matcha, the umami leaves a creamy coating in my mouth and the flavors and aromas stick around for hours.
